I made black bean tacos last night.
Black beans, chicken broth, various herbs and spices, picked red onion, pickled radish, pickled jalapenos, salsa verde, habenero hot sauce, and cotija cheese.
Some of that stuff was home made.
And home grown.
I only had 8-inch tortillas, so they were like extra large tacos.
I grew maybe 1/3 of that?
And made at least 2/3 of it.

A lot of rain today. During a break in the rain, I went out and harvested some collard greens.
They aren't just shiny from rain, but this variety has a shiny waxy layer that protects it from pests.
Generally this time of year bugs would be eating my brassica really bad. But these have very little insect damage.
Anyway, so I used these to make some caldo verde.
After browning sliced sausage in oil, I removed them and sauteed the onions and garlic in the rendered fat for a while. Then topped it off with 2 quarts of chicken stock.
And added 2 lbs of peeled and sliced potato. Brought that to a boil, and then simmered it for 20 mins until the potatoes were falling a part.
While that simmered I sliced up the greens into thin ribbons.
After the potatoes were falling apart, I blended them up with an immersion blender, to make a really creamy soup.
Then I simmered the greens in the soup for 15 mins.
Traditionally it's served with a slice of sausage and a drizzle of olive oil.
I was indulgent and added two slices of sausage.
It's weird, isn't it? Like some pictures here are from seeds people saved each year, sown, fed by rain from the sky and compost someone made by hand, harvested, cut up and cooked that day, and posted here. Some are pictures of stuff people made from fresh food they purchased. Some are pictures of food other people made that the photographer purchased. Some are pictures of food that was frozen and re-heated or something. And some pictures are not food at all. They are just pixels generated by AI and kind of look appetizing, and kind of look fake, and nobody could ever even eat. Shit is weird.

Tonight I made a double batch of Fragolino, and bottled up this years batch of strawberry wine. The strawberry wine will need to age in the bottles at least 6 months to really shine.
I only made eleven 750 ml bottles of strawberry wine this year, becuase last year a lot of my strawberry plants died off during a drought.

Last year I made 25-ish bottles of strawberry wine, and there were plenty more strawberries for fragolino, jam, fresh eating, etc.

It's kind of a Spanish style spicy chickpea stew.
Chickpeas, onion, carrot, celery, garlic, greens, with smoked paprika, parsley, bay leaves, sherry vinegar, olive oil, black pepper, and veg broth.

Made like 3 quarts of Habanero hot sauces yesterday.
All three are almost the same recipe.
1 qt used green pods. 2 qts used red. I grew all the Habaneros in my garden.
A qt of red and the green used white wine vinegar. The other qt of red I used some home made strawberry vinegar, made from strawberries I grew.
They also have a little garlic I grew, and a little onion I bought.
Very hot.

As an avid fan of cooked sauces and meat stews, I might one day try attempt to do the same
Fermented hot sauces are rewarding, and fairly simple.
This was the first super simple sauce recipe I used:
I just iterated on that, doing small batches and tweaking the recipe to fit my tastes until I settled on my final recipe.
I have stuck with Habanero sauces for several years because I wanted a very hot sauce, but I plan on growing some Thai peppers this year, and if I have enough of those I will probably come up with a sauce inspired by Thai flavors.
