R3D1 as a run itself (not necessarily the "hard" goal of sub 11 minutes) is probably the most accessable while also having fun dynamic things to do (generally fun to run fast aswell)

It has a technical 50/50 rng right at the start (tho at worst the time loss is around 10-15 seconds if you get the worst there)
