Try verifying game files and reinstalling everest.

Celeste seems not installed, but it was working today when I opened it before updating everest (at least base game was working, I didn't have my mods tho)

Olympus is a separate application and doesn't interact with celeste's save files at all. Reinstalling everest doesn't erase your saves either. You can copy the Saves folder to your desktop. Should be somewhere in $HOME/Library/Application Support/Celeste/

reinstalled celeste and everest, still happening (though now I can open basegame fine). This is what happens when I try to open everest
