So I've been using a shared family account for all my games, but I've been wanting to move my games to my own, separate account (yes I will buy the games normally before anyone starts questioning) and my issue is, how will I transfer all my save data to the new account? Like, time spent in levels, custom maps, save files, completed levels in collab maps, as well as in the base game, stuff like that.

If you are also moving computers just copy and paste the Saves folder into your new install. You might need to disable steam cloud when you boot up the game for the first time.
If you are just changing accounts on the same computer there isn't a straightforward way to do this since no matter who is playing the accounts always share the same savedata folder on the computer. Or if you look at it in another way you don't have to do anything
Just make sure every family member saves into a different save slot.
it's not as much of a problem that my family is playing the game itself, it's just that I wanna be able to buy games on my own account without having to be asked "why are you buy a gambling game called balatro" or stuff like that.
also, would it work if I sent the saves folder to a different computer, then sent it back to my own?
In that case you don't have to do anything since all steam account on that computer have the same save files.
Wait I might be dumb. Steam cloud probably deletes the save files when you change accounts on the computer. If that happens just copy and paste the saves folder to your desktop before changing accounts and restore it after changing accounts.
so wait, i just want to check if I understand correctly just in case, if I copy paste the saves folder to the desktop, then switch accounts, reinstall the game anew, delete the fresh saves folder and replace it with the old saves folder, (re-download everest, dependencies etc) it should be ok?
Yes. You might need to disable steam cloud when you run the game for the first time or it might "restore" the empty save files. After starting the game once with copied save files you can turn steam cloud back on and select keep local files. When prompted.
