Does anybody know what could be causing this?
Every time I launch Everest, even with no mods enabled, the lighting gets messed up. Does anybody know why this happens or how I can fix it?

update your graphics card drivers
do not use windows driver updates, as they're an exercise in futility
(as in, they do nothing but waste your time)

you can find driver updates on your gpu vendor's website
i.e. if you have an nvidia gpu, you can find graphics drivers on nvidia's website
