There's two big ways to do this. Either the original model is modular (so things can come off) or you have multiple models with different damages done.

The problem with modular is that all of the 'pieces' must move at the same time - which increases desync.
The problem with multiple models is that you create a necessity for 5-9 different damage models for EACH CREATURE vastly increasing production time.
Permanent visual injuries are dumb.
