I start with a single one sided plane and use mirror modifier and go from there when it takes shape I add a subdivision surface modifier

Nice. I started with a cube for mine and then added subsurface a few times and blocked it out up to a point then applied those and then went into sculpting for mine. I haven't started on the legs at all though. And right now I'm trying to simplify the poly count XD. I'm still learning as it were.

it's at 16 mil face count at the moment so blender is grumpy with me while I try and lower that XD

Yeah. I was just experimenting with a different approach. I managed to get some good sculpting practice in for detailing, but it's being a bit of a pain atm with poly count and retopo. I may be able to salvage the whole thing though, if not I'll scrap and move on to an actual reference creature instead of making it up as I go

I've done the blocking out method before and it does really well. It's what I've started with. Only I start with a cube, cut that in half then mirror modifier with sub surface. Close to the same thing though. I've had cleaner results with blocking out that way for sure.
