Survival has specific species which have updated stats and different growth stages
Sandbox has the same species that survival has along with other species which use old stats and have no growth model

A server with the survival gamemode may have people playing as sandbox animals, this is because server admins can give themselves sandbox dinos trough the server configurations (iirc)
These servers will oftenly let people play as sandbox animals trough "giveaways" or other events/things like that
