i think im going to use kde plasma, as that is what im using right now (with endeavouros)
or maybe hyprland

Its fine to use archinstall at first imo. More exp user dont like it but its not bad imstaller. Try the distro see if you like it. Its great for quick and first setup.
tl;dr: For an experienced user, 10-30 mins. For a new user: 30mins- ~3 hours
Its not super long to do an install and get some first pkgs installed, but its an endless journey ahead, Im constantly learning new stuff about arch and linux in general.

To really answer your question though I'd say learn to use the CLI, it really helps in any distro. @young anvil
