Mount everything and then send the output of ls /boot in the chroot
Make sure you mount boot after root
might also be worth checking /boot before mounting boot, otherwise it might appear to be on the esp partition when that's just mounted to the same directory where they are contained anyway?
I thought when you mounted something it fully replaced what was in that directory, not acting as an overlay.
I guess there’s no hurt in mounting boot by itself though
