You can do that with "File Associations"
For example you can set .mp4 files to open up in a certain program
That is crazy that KDE wants you to manually associate a file type with an application. I thought they would have more default options or maybe an extension addon that gives more options.
Why? This way you can customize it even more

Yeah I guess so but doesn't seem very KISS. New users may not know about file associations and may just want a simple default application chooser for file types.
Fair enough, though it doesn't seem that complicated even for a new user.
it will prompt you when you try to open a file of that type, also it's automatically set for most stuff
