so you got this boot partition, whatever this is? and the linux boot partition?
Run sudo mount /dev/nvme0n1p1 /boot/efi
Then ls /boot/efi
I’m just guessing which one is your efi partition
Os-prober didn’t find it cause you don’t have your efi partition mounted
If the files are there after you mount it you may want to regenerate your /etc/fstab so it automounts in the future
You probably just forgot to mount it during setup

he did run ls on /boot/efi/EFI

and he replied with "GRUB" which i assume that it is the only folder there
Whereas in your screenshot you ran ls /boot/efi/EFI
i told him to ls to the "EFI" folder when he did ls to /boot/efi
which i also assume that he did "ls /boot/efi/EFI"

You’ve formatted it accidentally
You can recreate it with a windows install usb
No need to reinstall either os
Although the windows installer might overwrite your grub stuff so make a backup (copy the GRUB folder to your home or something)
Only problem is that its a bit annoying to make a windows install media on something other than windows
