I have been using the meteor for a bit and there are times where I feel like I should have gotten a kill but instead the enemy plane survives.

Well bloody open your ears then. On the mk 5s, either air, or if you dotn feel you are doing regular damage, ground belts. They will knock out pilots, spars and engines really well.
