Is there any way to disable the bombsight making the plane level out when you go into that view?

yes there is its somewhere in controls or options, forgot what its called though

Something regarding autopilot and gunner stuff; just searching “auto” should bring it up

It should be a toggle button under options > air battles.
If I remember correctly it is NOT under "Controls"
