You will be pleased to know that you can infact hunt elephants in a large number of countries legally in Southern Africa.

Lions are Vulnerable, not Endangered
You can legally hunt Rhinos, Hippos, and Elephants in several countries across Africa.
You can also hunt Bengal Tigers in the Hunter: Call of the wild
In order to place Elephants the game Engine needs major changes to handle their size, new mechanics, the redesign of the trophy lodges, the addition of new plaques and taxidermy stands; So it won't happen for at least a few years when an African reserve comes out, if they can afford the necessary changes.
There’s nothing to suggest that’s a problem, the devs have repeatedly said that they are defiantly able to add elephants to the game
Even if they do clip on some lodges that’s not really the end world, mounts could be limited to head only, neck up etc to mitigate for smaller spaces. Ultimately it’s a hunting game not a lodge builder I would even be fine with just tusks being mounted etc.
A bug in the elephant model and behavior would ruin the entire experience of the map. I believe a standard map in COTW can accommodate two to four small groups.
