Damaging the spine may interrupt communication of the nervous system and most likely disable, however, the possibility of crippling your quarry instead may not equate to an immediate ethical solution that most strive for.

The only recent exception I’ve seen in-game is the lung-combo from above or from below, often coincidental.

Heart & lungs, or lungs & kidney if you’re confident but double lung is safe if you have that angle/option.
