I think the reason for people not doing them as much is because there aren’t many rewards especially when it’s not a mission animal. It would be nice to like get a cool new skin for weapons or a new weapon that you can’t get any other way to really entice the player into working on the missions but then they can’t feel super Grindy because people won’t feel the need just for a single weapon

I didn't find it....it found me. That simple. I was walking with my pointer hunting red grouse and heard its warning call. I then shot it after tracking it for about 100 yards. Nothing legendary about that, just a routine hunt. I don't think this is a spawn that requires a massive grind. It's either going to show up randomly, or it isn't...if that makes sense.

The red grouse are all over the north central hills, similar to the zone I got my Haggis. So try those rolling hills with the pointer. You can shoot them on the ground too. Don't need to be in-flight to score.

Definitely a size difference between males and females, but I don't really think there is between the males. However, it makes identifying sex much easier on the fly.
