The Level / Difficulty indicates the amount of senses of the animal and at what distance they can detect you, predators have a higher level because they have better senses, better hearing, sight and smell designed to detect prey in nature..
The senses of the other animals work the same but they are not exactly the best, Kangaroos have good eyesight and good hearing to detect predators, it is logical that they have this difficulty
