There's a few moving parts to it, and there's a few guides on YouTube, but the basics are:

• spot drink zones of your target species
• set up a tent (for fast travel) and tripod (reduces hunting pressure per kill) far enough away so that fast-traveling won't spook them (i think anything further than 250 meters is fine)
• shoot the highest score animal in each group (a lower herd average means you have a better chance of higher scoring animals, which is ideal when you're hunting for diamonds)
• make sure you collect every animal you shoot. Jaxy (community manager) said on stream that not collecting harvests will actively hurt Great One spawning odds. idk if this applies to diamonds as well, but make sure you collect every kill
  There are some other specifics, like stacking diamonds and such, but there are guides online for that
