Adding on to this, while deer specifically have not exhibited erythrism often at all (afaik its pretty limited to elk and whitetails so far for documented deer species with erythrism), it is NOT crazy to assume mule deer and other deer species can do the same. Erythrism is kinda like leucistic where just about anything could potentially get it

Its not like albinism and melanism where you do have a slightly more limited pool (lions and tigers so far haven't exhibited albinism, red deer and mountain lions so far haven't exhibited melanism)

The only reason why erythrism is a bit rarer (and lowkey kinda an underground/not as well known mutation compared to leucism) is because erythrism, as you said, requires an excess of phenomelanin, and besides that they aren't really tooooo different from commons most of the time
