Play styles exist, and not everyone is defensive in the opening! When you play chess, play with a goal. You can play aggressively, passively, you can even mirror white for all you care. As black you have the chance to set up how you want the game to be played, and the move you respond with to white’s opening move can tell your opponent a lot on how your style of play is

There are many openings with black, but you cannot play them into every first move.

Openings arent one move. Openings are a couple moves that tend to be repeated among players, because of their pros and cons. Like how you hear people describe certain openings as defensive, or offensive, or tame, etc.
when you learn openings, learn the theory behind them. Why this? Why that? Why not this? Instead of just memorising them. Memorisation is the death of chess. Learn the consequences of your moves and openings will make a lot more sense to you.
