Caro-kann is c6 against e4. If the opponent doesn't play e4, it's not the caro-kann anymore. With black you can definitely play the modern defense: g6 bg7 and then something like Nf6 to go into a king's indian (the point is to castle fast). Hikaru plays it a lot.

Nah if they don't play e4 because e4-c6 is the caro-kann which you know about, and if they start with any other move and you play c6, then it's no longer a caro-kann. Shouldn't matter at your level because probably few of your opponents will know theory but in general just follow good opening principles. I suggested the modern defense bevause it follows good opening principles and is playable against anything.
