I'm pretty sure if you have yet to play ranked in a long time the system would assume you have a different skill level and wins will give you more rating points and losses will take away more, so you would quickly reach your true rating which is maybe 500/600 based on what you said

Frequently beating 2000's means you'd not be at 1600(or 1100, w/e u said)most likely. Elo works so that if you are magnitudes stronger than ur opponents, ull end up crushing ppl far below you. That's how hikaru can climb to 2700 and not lose a single game out of 300. Your elo is where ur skill is at if u play the games.

at the 2000 level, they have a memorized repetoire most likely, and understand endgame things like the philidor endgames, opposition, very advanced stuff 1100s wouldnt be at 1100 if they knew and played at that level. A 2000 otb classical or rapid player is very strong compared to an 1100. Openings wont cause you to beat them.
