if it's already stained and finished... I think you could try some of the wood finish markers on wood putty. Try to get a close color match?
if I were in your stead though, I would slightly ease the hole edges (like with a cork or some leather scrap) and let it be, prtend it's part of the rustic character your table seems to have anyway
If you found the right size dowel and stained the end dark, you could mimic another knot pretty easily
If it were me I'd pretend it was an intentional dowel/cross pin. Just do the same thing on the other side and hammer in a nice contrasting dowel
if you do this, don't drill at 90°, skew it a little so the cross section won't be a perfect circle but a nice elongated ellipse, will be more realistic
I was thinking that OP could take some more douglas fur and make an appropriately sized plug for the hole, then finish it like the rest of the table
Possibly , but if it's not original wood, it's not likely to match and draws the eye. If it won't match, it's usually better to make a patch stand out or look like a knot here
Matching finish is possible but will take a lot more time than plugging it with a dark plug
Even in the color matches the grain won’t, the “disguise it by highlighting it” general plan seems best to me as well
