Right after chapter 2 starts you need to walk up to your horse then switch from the Gunslinger outfit to custom outfit one because for some reason it's saved on your horse then go back to your clothing chest and save the outfit with any modifications you would like

when you kill a specific animal theres a 3 day cooldown
