navy revolver and Mauser are the best imo, trader role where you hunt animals and fill your camp up to do supply runs, trader role where you go around the map finding collectibles for madam Nazar, naturalist role where you sedate animals for there blood samples, and moonshine where you buy a moonshine shack after getting to level 5-10 on trader role where you make variants of moonshine and then do runs to sell it. Also tons of side missions you can do talking to the strangers around the map

Actually on the railroad contract part 3 im pretty saure that on the part where the director goes in a train you dont have to kill him but ig you kill him and loot his body for 4 capitale, you fail the mission. And theres a little cooldown but don't worry about thag, easier than getting 1 to none capitale a mission

I mean it really depends on your bonding and saddle, if you want a bigger horse I'd look at draft horses or some others like the Turkoman (decently big in my experience)

I would advise getting the nacogdoches saddle once you're level 35 and hooded stirrups once you're level 54, this adds +3 speed and acceleration and makes practically any horse have infinite stamina
