Your reward is dependent on the amount of time you take. As in, the longer you take, the more money you earn. Weird, I know.
So waiting until there's 30 seconds left to turn the target in will actually grant you a considerably better reward.

Call to Arms, you get 1 gold bar every time you complete all 10 waves. Bounty missions, legendary ones give you up to .68 of a bar if you wait 15-20 minutes before turning the target in. You can grind your daily challenges, you get .25 gold bars for every one you complete during the last week of a 28 day streak. Rewards, you get .40/bar every time you sell 100 herbs to a doctor (just one of the easier examples)

The amount of money you make off of rushing through four bounties can ultimately be less than the amount you would've made by running out the timer on just two. You're better off waiting it out, trust me.

Not like that, although I've had that happen a few times. There's a bug with bootlegger content -- namely the "poison the rival still" missions -- that sometimes occurs if you opt to shoot at them. It'll leave you stuck at "Kill the remaining enemies" but nobody ever comes.
