Yeah the Mustang horses are amazing! But to be fair, ride whatever horse you think is beautiful. Don't force yourself to use a specific gun or horse because it's 'meta'. You'll find yourself not enjoying the game. Instead, get your fun out of being and doing what you want 🙂

Legendary animals spawn randomly. If the animal is too big to carry you skin it and carry the skin on the back of your horse to Cripps his butcher table and sell it

#

Otherwise bring the carcass intact without skinning it

#

You can also manually trigger an Legendary animal spawn by doing a mission for the Naturalist role

#

Instead of sedating it, you just skin it 😄

Greyed out means they don't have any missions for you right now. Most likely because you've just finished one for them. They have a cooldown period!

Their name will be visible if you click them on the map. But if it still says "Stranger" you haven't met them yet 🙂

Is it worth it buying the collectors bag to make money? - I currently only have bounty hunter and it gets real difficult by myself like 60% of the time cause I just don't wanna put the effort in but I can grind hard on collectables for sure, like just watching youtube and grinding them. I've got almost 60 gold
