Once you reach level 20-something, you'll unlock the ability to purchase another gun holster. Do that, and you'll be able to dual wield.
I don't remember the exact level, but it's in the 20s.

Can't atm, but good practice would be to pick fights with characters around the map. Remember to block and fight, not just fight, I made that mistake a lot

I highly suggest picking fights with npcs though, try going out and lassoing one of their horse to fight, so there's less witnesses

To clarify. I don't do this myself. It's actually a huge annoyance to me. Was doing the last mission for Jeb from the Blood Money missions. We had to escape the law and my partner's horse goes down. I take the time to clear the area of the law, go to revive their horse, and they shoot it in the head. Was so annoyed i kicked them from my posse after the mission ended. I hate seeing a horse companion die. I'll actually go up yo a players horse and revive them if needed.

I've put down people horses if they've been annoying little shits to me or downed my horse as well.
Otherwise, pretty religious about caring for mine and others horses.

It's the only role that has a return on gold, and the even the starting Breton Horses are very durable mounts with decent enough stats.

It's your decision, personally I wouldn't suggest it unless you still have the 25 gold bars for 5 dollars deal.
Unless you bought the standalone version of RDO which is I guess less severe than buying gold bars when you bought the game full price already.
