I don't remember about body type, but you can go check. You don't get charged unless you confirm changes. And no, no such thing as cosmetic bags for your character.

Check what Gus sells, if he has something you want that requires specific pelts, sell to him the first time. If he doesn't have anything you want, just go to a butcher and save the trip to Gus.

The mission difficulty (1, 2 or 3 star) or if you do the mission fast or slow (slow gives more money, weird enough) So maybe it had something to do with that? Though, 15-25$ is normal payouts if you wait/are slow.
