I’m struggling to understand the Collectors profession a little bit. Could anyone tell me if there are fixed locations for the collectors items or do they randomise and spawn anywhere?

Each collection has a few specific places that can spawn an item, though the item itself is randomized, so a spot that gives a coin is liable to give you any coin from the collection for instance. There are some collections that do not follow this rule and instead change predictably based on a daily cycle. The server mods have decided that I can't link it here directly, so if you go search for "collector cycle" or somesuch you can find a map utility that helps with locating these.
