in my experience legendary bounties can reliably net low to mid tenths of a bar while standard bounties range from low hundredths to low tenths depending on type and performance

if it makes your purchasing decision easier, you can get a free bounty hunter pass through a promotion with amazon prime gaming, since you can get a free trial of that and immediately cancel it. you can then spend the 15 bars on a different role

How do legendary bounties work?

It's a scripted mission that places you in a location with an objective to capture the target dead or alive. There is no time limit, but depending on the location they might have an opportunity to escape if you aren't quick.

Once you have them apprehended on your horse you're prompted to bring them to the nearest jail. Some of the more remote locations have a prison wagon nearby you use instead. If there are multiple targets the mission won't end until all of them are accounted for.

You can level health with fishing or fist fighting, but another easy way is to use the bow on enemy npcs (ones who are already red dots on the map) and get headshots on them with the bow

It’s a big mistake getting any other role other than bounty hunter first purely because of the gold payouts because eventually your going to get bored of picking up cards all day and you will have to grind out another 15-20 gold for a new role whereas if you get the bounty hunter once you get it to level 20 you will be ready for you next role and already have the gold available
