Well it has open fields... and often times there's a herd of buffalo, but they don't give as much as you'd want. The highest material are always the animals that have a full carcass, without you skinning it.
The rarer the animal, the better. Near Blackwater, a cougar would be your best shot.

Thats the best place for hunting and its right between blackwater and if you have a shine shack that's in tall trees.
There's a couple of cougar spawns in the area. I run into them all the time.

The best legendary mission is the Golden Spirit bear and it has a material worth of around 60, everything else is 20-30 if I recall correctly
Otherwise any legendary animals that you find while free roaming, always take their entire carcass if you can.
Those are usually worth even more.
