Basically you just be on your horse all the time, once you got carcass you call for your wagon and put the carcass in once you done you dismiss it and recall your horse keep hunting

im not using whatever gadget or gizmo harriet sells for legendary animals and i have rank 20 for naturalist if that matters
im quite convinced rejoining another lobby refreshes the chance because i did this with the winyan bison (this is the 1st time i found it, it's another story), the teca gator and the mud runner buck and it all worked
so if i were to look at this by myself i believe i literally have just been collectible based on luck'd by R*

It's not necessarily hard, it's just tedious. Gotta play for a month straight before you start gaining anything worth something from dailies. Goes from earning like 2 gold for all dailies to like 5 each day for all dailies before you get additional roles
luckily a modder jumpstarted me when i first started 
I still do most of my dailies, but the grind when you first start can be brutal. You gain like no money too, so you're stuck looking like a backwood hobo until you save up to buy your first actual coat lol

Trader, best source of money. Money is the main thing you can't earn easily, Trader role at Rank 10 gets you access to Large delivery wagons which can net you $650 for a full, long-distance delivery.
After that it's a tossup between Moonshiner and Collector for me. Both have their merits. Moonshiner has a bit more substance and interaction, and the absolute most free roam random encounters. It's a decent side hustle as well, you make a substantial amount of money, less than Trader, but you can make deliveries more often than Traders can. Collector for new players isn't terribly worth it, but collectable items have predetermined spawns, and they can be worth a considerable amount of money if you choose to spend the time running around the map finding them. Alternatively, many collectible items can be looted from enemies, like Antique Alcohols, Tarot Cards, etc.
Trader, Collector, then Moonshiner personally.
Bounty Hunter is kinda repetitive in my opinion, many legendary bounties require a posse to reliably complete, and very few can be done by one person. Gold isn't even really that hard to earn either if you play the game consistently, daily streaks can net you .5 gold per daily mission once you've hit a 28 day streak. Super easy to maintain streaks, most days have an easy to knock out task to continue your streak as well.
and Naturalist is fun, but detracts from the primary focus of the game
