A tip: Don't play missions via the replay option in the Pause Menu, since it resets your character to default stats. Instead create a new save file before each individual mission so that if you somehow miss a gold medal objective, you can load the aforementioned save file.

There’s and early mission in chapter two where a character mentions bounty hunting and after that a white marker will appear on your map above the Valentine Sheriff Office. Once you do the bounty there bounty poster will begin to appear in each town with a sheriff office.

Stealing what ? Robbing people only nets you about a dollar per person. I suppose stealing carriages makes good money but the bounty you revive completely outweighs the cost. Robbing trains is also only somewhat lucrative and also nets you a high bounty.
