You only keep "Unique" type items.

#

So, like, Guns, Clothes, letters, maps... Valuables are tricky. Like, Obviously Silver earrings and that sort of thing, sale. But then the stuff you will keep will be like that Emerald you got from Margerot, (The traveling Circus Stranger mission)you would keep. Those kinds of things.
