You can check in the compendium what weapon is best for a particular animal.
Big caliber rifles will ruin a rabbit's pelt for instance even if you make a headshot.

When you’re riding on your horse just remove both weapons and then put them back on (all while you’re on the horse) Now when you leave your horse the weapons should just automatically appear on your back
