Probably at the same time as you're doing Hunting Requests and Exotic missions. Also, make sure to bring Pelts to the trapper, if you are one to care about such things.
I find it best to do a bunch of things at the same time. "Several Birds with one stone"

I noticed that there are lots of animal recipes from the trapper such as clothing, sadles, hats, etc. Would that benefit from the zoologist achievement once I collected everything from the trapper?

The Trapper clothes aren't actually relevant for any of the achievements or anything else. I just found it fun to work on them, while doing other things.

I completely forgot Anthony foreman was the one who kidnapped Tilly. The reason I hesitated was because without Anthony foreman, I wouldn’t be where I am in RDO. It was doing his missions that got me the money and gold I needed to become better. So as I had that knife to his throat, I felt sympathy. I basically saw this guy as a friend. But he kidnapped Tilly. And you don’t mess with Arthur’s family. So I killed him and dumped his body in the river
