There is a broken bridge a bit northwest of Blackwater, but it's rather tricky, you need a big horse to pull off the jump. But, if you fail the jump, the horse will die, and obviously the challenge fails.

springfield is ideal since it works on all animals that dont need varmint or small game

wolves can be killed from a repeater or rifle

pretty sure bow and repeater are same value of dmg, springfield normal works on everything, bolt action normal does not work, but using high velocity works same as springfield normal, and using forced-scoped rifles is cringe
