there are some wacky things you can do with bounty hunters, i kill them all except for the last one, hogtie him and put him on my horse, wait for wanted to go away. Cross state lines and take him off your horse and cut him free - sometimes big packs of dogs appear instantly surrounding you, often times there will be new bounty hunter groups that just pop up instantly - its great for farming gold nuggets from their horse saddlebags and whatnot

just do that over and over its a blast
