If you buy a train ticket it guarantees a passenger train, then if you stop the train while it's in a tunnel the law can't physically get to you. So you can rob to your heart's content, and then leave the tunnel from whatever side the police aren't on.

Oh yeah in the part of the game where as John Marston you meet Rains Fall in Annesburg you can get on the train as it leaves and goof off with it. It goes super fast so it destroys a lot of stuff as it travels around the map and the guards have no AI so you can goof off with them. I traveled around lassoing people standing at stations as I passed and dragging them along. It's really fun
