I'm not entirely certain, but I don't think most of the content changes with Story. I think the bonuses give you a special weapon/weapon customisation Preset, a couple of Unique Treasure Hunts, and some other small things. Overall, I would argue against spending extra money, and no, you don't need Ultimate to complete the game, or get 100%. I believe it's not dissimilar, to, say, Tomb Raiders Season Pass, which gives you a bunch of Cosmetics and maybe a Tomb, but makes no overall impact on gameplay

A prequel to RDR2 would work better. (Spoiler warning for RDR2)

The Origins of the Gang, Hosea and Dutch finding Arthur as a teen, John joining (and then leaving for a year), more of Mary's and Arthur's love life, hopefully visiting Arthur's son. Right up to the events of Blackwater, meaning the Epilogue camp would be the camp outside Blackwater, and we wouldn't have a Journal for the last chapter, since Arthur writes down his last one was destroyed. There should be time gaps in between the chapters, and each chapter's story missions focus primarily on a part of Arthur's life that was mentioned in RDR2. Personally, I'd like to see some of the aforementioned ones, and some others.

I can't tell if you're joking or not, and I know a lot of people have said they would like to see Sadie as a main character, but if this is the way they go, we'll have the Rise (RDR3), the Fall (RDR2), and the aftermath (RDR1)

Also, that seems like a countdown so it makes sense

Loyalty is probably how well they respond to various commands, voice and physical, and Courage is probably their reactions in a situation.
