• You can use health cures in your inventory if you have any, you can buy them at literally any general store.

• To get rid of wanted you need to just escape, and if you mean getting rid of bounty. Go to the nearest post office and you can pay off your bounty there

the game tells you if you study the animal

for basically anything rabbit sized you need varmint rifle

I have studied like 140 so far

big game: bison, moose, gator, grizzly bear - sniper rifle or improved arrows
medium game: pronghorn, deer, wolf, coyote, fox, etc - regular rifle with high velocity/express ammo, sniper rifle, or arrows
small game: rabbits, skunk, badger, possum, snake, etc - varmint rifle
even smaller game: squirrels, small birds, rats, etc - small game arrows

its common to miss that since the game only really shows you how to hunt a deer
