Another way to don't lose stars is to get the animals with lasso and press o when you are near them to kill them with knife

White Arabian horse.
Probably the best horse in the game.
After you ride it it seems like you are flying with it and can't use any other.
There is red Arabian too they are same but the color is different.
For the stable I have a blue horse too and a pink perlino andalusian.
Later on game you can find the horse called beul too and it's pretty good.
You can search all of the horses that I said in the Google for location.

Arabian horses are really fast and the most Beautiful

Don't forget to customize your saddle to get better things

Honour in this game is something else man, I started my second play-through a couple of days ago and went to Valentine, after having almost nearly the highest honour I accidentally trampled a NPC and had 10 different lawmen on me, they shot my horse down and then me, since I didn’t have any revivers or time to revive my horse, he died, and so did I.

My honor went down after i do a shoot out with a lawmen since im still too used of doing shootout with police in gta lol, completely forgetting honor system exist

Killing lawmen doesn't lower your honor it just makes your bounty higher.
People that you shoot and your honor decreases are just regular npcs with gun that want to defend their city.
Don't forget there is no police in van horn so if you start shooting there your honor will be destroyed.
These regular npcs that defend are easy to recognize, they are small red dots on the map but lawmen have a star on that red dot on the map.
Don't forget that killing lawmen horses decreases your honor too.
Have fun shooting. I always recommend have a save before doing these things that you can restore it.
