I finished the game (epilogue included) and I'm only at 83%, so I would like to restart the game and stay as long as possible on chapter 3/4 and do all side quests then, but I'm not sure if some side quests only unlock after that point

Not really, I think chapters 2-3 are the nicest ones to come back to camp so I want to do all the quests / hunting / crafting possible there until there's nothing left to do without progressing in the story. If it showed challanges for those bandit, master hunter, sharp shoter, gambeler. Click on progres go to challanges and it will show you what you have to do. There are 10 callanges in each section. Try looking at that. (Maybe its this) i dont know
