so when ur at the ridgewood farm theres like a small "house" and behind it theres a lootbox you can find some ammo a naval compass and the gold bingot the bingot is glitched so you have to climb a tpilet and jump on the table where the lootbox is and kick the bingot out the lootbox when you have done that get your horse ride ti the train tracks nesr the farm get back and repeat the whole proccess

If you want to save before every mission, yeah, you can only do one for each save slot. So if there's 10 slots, you can only save before 9 missions. Because 9 missions + the save file where you're playing/progressing through the story

so do i just wait and keep doing missions until it pops up? because i think i saw something saying a certain mission needs to be done somewhere in chapter 4 before the rest of the calloway/gunslinger missions pop up

If you have it on steam then try verifying game files, my game got stuck on infinite loading so I verified the files and it worked. You go to the game on steam, right click and there should be an option to verify

But it comes down to preference and what you are actually looking for

I dislike gators so the Bayou is a nono for me

North of the Bayout close to the Van Horn mansion is also a nice hunting place for smaller animals

Northwest of the Bayou is also a good place

In the plains is where I also spent a lot of my time hunting deers and medium small animals like possums
