I've found the most consistant way to do it is to trigger eagle eye RIGHT before the photo taking camera shift happens. The horses will go up a hill and stop there. Triggering eagle eye will then always reset the tracking bar to full, you can be pretty far from the trail and have it still count as tracking it.

It is faster than all other horses in the game. The area you find it in is weird though, it'll randomly stop and move around on the hill slopes.

I've gotten it to work both trying to outsmart it, and just chasing it around for awhile.

very inconsistent with gun to gun, if i use the mauser, i dont have to be precise and usually get easy headshots if i am around their head, with the bolt action i have to be precise to hit the head which means instead of having the dot reticle around the head or have it partially on the head, it doesnt work

Try to reload a save. If it doesn't work then you need to reach the destination without following the path the game gives you. Somehow that triggers the train to start

You have to hold it without aiming for it not activate your dead eye. And if you aim after doing so. It does not revert you back to original angle.

It does revert you back if you do not aim though. So you can quickly look behind you.

There's also a few that are story/Challenge related. They are not missable though. So they can be done after you complete the story as well

If anyone is in chapter 6 try not to make Strauss leave camp before the "red dead redemption" mission. What happened to me is that the game bugs out and Dutch will say Uncle and Pearson left the camp when they are clearly still there but you can't talk to them

It's because Uncle is required for the cutscene where you kick Strauss out

So basically, there's an event area in the game known as The Timber Appleseed Company which has 4 stages of missions you can do. The 3rd stage involves killing a bunch of wolves that have been attacking the workers there. I got the 3rd stage when I played it for the first time, but from then onwards, after completing the 2nd stage, I am only able to do the 4th stage where you can buy lumber from the foreman, which basically skipped the 3rd stage. Now my question is if this is a bug, or is this supposed to happen? (Although I doubt it.)

There are event areas in the game where you can witness an area gradually developing.

at the start of chapter 2 your body weight with arthur is perfect. i just eat the camps stew whenever it is put out and for me arthurs weight is still perfect

can you catch a legendary fish again if you’ve lost it because the horse that i put it on disappeared and it’s ticked off the map but i didn’t get to send it

This happened to me before. I caught a fish and meant to post it immediately but died with it on the back of my horse. I was trying to figure it out and couldn't really find if I could recatch it. I waited and eventually the final JG mission popped up, so I'm assuming if you die with a legendary fish on your horse it gets automatically posted.

Someone said something about Moose only spawning in the morning. Unsure about this...

However, There is a ledge just under the Brandywine Waterfall, west of Annesburg, that is a good spot to check. Also a bit west of 'The Loft', I've seen them there as well.
