Rose Grey Bay, one you can only buy in the epilogue, is the best. Black Arabian is a bit better than white, but white you can get for free.

There are, however, other hidden stats to a horse. Arabians spook easily for example. People will argue in favor for horses other than the Arabians.

I heard arguments for the Missouri Foxtrotter and Turkoman is better. With good saddles the Foxtrotter is just as fast but more endurance/health and better at terrain and braver so less likely to buck you off.

While the Turkoman is slightly slower but the listed starts above is through the roof.

I really don't get what you're trying to say, if you're talking about stranger missions, a lot of them are available in the epilogue, while others are exclusive to certain chapters.
The epilogue has 2 parts, which are related to the story. You can do whatever you want during and after the epilogue, but you'll need to do some missions to get your weapons and stuff etc
You'll also unlock new austin and the rest of west elizabeth during and after the epilogue.
Moreover; the 100% isn't missable

I can confidently say that is my favorite game I have ever played and trust me, I’ve played a lot. the amount of detail that went into rdr2 is beyond belief.
