John's attitude about his life involving with family, he was very absent about it. As the story progresses, when he got annoyed that Arthur took Jack on finishing trips. When Jack got kidnapped and eventually thinking more about his family near the end of the story.

His redemption was turning away from a "selfish" outlaw to a devoted family man. That's real redemption in my book.

Arthur had no family, since it fell apart with Mary because he was an outlaw. I like to think Arthur began low honor and ended with higher honor (everyone had their own opinions on this ^^).

Arthur's redemption only began when he was diagnosed with TB and his perspective changed, especially when Dutch was turning crazier by the day. I don't know if Arthur had a soild redemption, it was definitely good but not soild. I wasn't personally satisfied when the trope for Arthur was he got progressively ill and started doing good deeds before he dies.

Heck, Arthur basically supported John's redemption more than his own but this is just my thoughts

I consider high honor Arthur canon anyway.
And I always considered Arthur a more honourable outlaw
But here it goes:
I feel like Arthur actually attempted to make his amends with past victims. The entirety of chapter 6 is based on you finally breaking out of the spell Dutch had over you and realizing how fucked up everything is. That’s why you yourself attempt to help the native Americans. And of course, helping Penelope and beau, helping the downes family, etc.
He actually attempted to help people.
I think the ending (high honour) symbolizes that.
He died peacefully at the top of a mountain with the sunrise coming up.

Meanwhile John did live a peaceful life, but that’s not true redemption really, he’s a man that tells himself he’s redeemed, but Arthur actually attempted to redeem himself.
Notice how all the stranger missions in rdr1 all end in tragedy? I kinda think this signals/symbolizes that John is already too late for redemption.
Just my take.
