If you play the story again you can make different decisions and be more of a bad guy or be more of a good guy, and yes honor still exists it just dictates how your character acts towards people in cutscenes

Keep in mind any money you have as Arthur won't save to John, but anything in your satchel will cross over. Your horses will not unfortunately as it's a 8 year gap. Any unfinished side missions are able to be completed by John with unique dialogue of him basically mentioning Arthur and how "He read about them in his journal"
